Just a recipe today, because it was tasty and I don't want to reinvent the wheel again next time.
1 lb ground pork
1 lb ground turkey
1 or 2 large packages King's Hawaiian rolls (or 4+ small ones)
1 whole yellow onion (minced small)
1-2 eggs (by eye for consistency)
1/4 cup bread crumbs (by eye for consistency)
1/4 tsp thyme
1/2 tsp seasoned salt (I use Johnny's Jamiaican Me Crazy)
1/4 tsp black pepper
1/8 tsp corriander
1/8 tsp cumin
In large bowl, mix all ingredients thoroughly. Shape mixture into small patties to fit onto the Hawaiian rolls (approx 2 inches in diameter). Grill or pan-fry patties. Cut rolls in half and lightly toast, if desired. Mix together about 3 parts mayonnaise or Miracle Whip and about 2 parts of your favorite hot sauce (I use Acadian's Honey Ancho Adobo sauce) and spread on the bottom half of the rolls. Place burgers on bottom of rolls with Pineapple sauce on top, finish with baby greens and cheese if desired.
1 lg can crushed pineapple with juice
1/4 to 1/2 cup brown sugar (to taste)
1/2 tsp cinnamon (to taste)
1/4 tsp clove (to taste)
1/8 tsp nutmeg (to taste)
In small sauce pan, add all ingredients and heat over medium heat until the mixture reaches a fast simmer. Then turn down and simmer until the juice thickens. Taste and adjust sugar or spice amounts to taste. Continue to simmer until about the consistency of hot maple syrup. Remove from heat 5-10 mins before serving. Sauce will thicken as it cools.
